We start swimming lessons this morning, so I'm making a hearty breakfast. We're having milk, fruit and One-Eyed Pirates. Everyone I know has a different name for them: Eggs In A Basket, Eggs In A Nest, Peek-A-Boo's, Eggs In A Hole. You know what I'm talking about, those egg/bread things that are pan fried. They are yummy and hearty. We call them One-Eyed Pirates. Until recently, when Edison informed me that he does not eat people and if I insist on serving him a breakfast that makes it sound like he is eating people he will throw up.
One-Eyed Pirates (by any other name...)
Using a glass cut a round out of a piece of bread. Butter and place butter side down on hot skillet. Put a little butter in the hole and crack an egg into the hole. While it cooks butter the other side of the bread. Flip and cook briefly on the other side. Serve with the round of bread partly covering the egg in the center.
