It's almost Eggplant Season. St. George and I share an passion for eggplant. We don't just like it, we adore it. We could eat it every day, cooked in any way, and be perfectly happy. Our favorite way (because it is fast and easy and so delicious and we can eat it sooner...) is in eggplant sandwiches:
Eggplant Sandwiches
Peel and slice eggplant long-ways into thin strips. Brush on both sides with Italian dressing, place on cookie sheet and place under broiler until done (our oven takes about 10 minutes). Then assemble sandwiches of broiled eggplant, slices of fresh mozzarella cheese, tomatoes, roasted red bell peppers and fresh basil.
